A series of masterclasses will be hosted by Hunter Valley Wine Show judges and winemakers. Be amongst the first in the country to taste Gold and Trophy winning wines from the highly regarded 2011 Hunter Valley Wine Show.

The masterclasses will offer an educational experience, as guests learn how wines are judged, whilst the myths of the wine show judging circuit are dispelled.

The classes include 16 medal winning wines, a tasting menu and the chance to learn more about the Hunter Valley’s finest wines.

3 weeds four course tasting menu, featuring highlights of the spring menu will be served throughout the Winemaster Class.

Ceviche of kingfish with chilli and lime dressing and horseradish ice-cream

Open squid ink lasagne with sea urchin roe custard,  scallop, braised octopus, poached white asparagus and bouillabaisse foam

Camomile tea smoked breast of quail and confit leg, hand picked crab, basil, sweetcorn and ginger jus gras

A selection of cheeses served with house-made lavosh, pane croccante and muscatel purée
